Refreshing Summer Watermelon Recipes

Here are some of our favorite refreshing watermelon recipes perfect for summer!

Salsa

• 4 cups diced watermelon
• 1 cup diced red onion
• 2/3 cup chopped cilantro
• 1/2 cup chopped mint
• 1-2 diced jalapeños
• zest and juice of 1 lime

Beverages

• 1 & 1/2 ounces watermelon juice
• 3 slices of cucumber
• 1/2 ounce simple syrup
• 3/4 ounce of lime juice
• 1 pinch kosher salt
• 1 & 1/2 ounces soda water
• For cocktail add 1 & 1/2 ounces of gin or vodka

Salad

• 5 cups cubed watermelon
• 1 heaping cup English cucumber
• 1/4 cup thinly sliced red onion
• 1/3 cup crumbled feta cheese
• 1 avocado cubed
• 1/3 cup torn mint or basil
• 1/2 jalapeño thinly sliced
• DRESSING: mix 2 tbs EVOO, 3 tbs lime, 1/2 minced garlic clove and 1/4 tsp sea salt
